It is a significant initiative that expects to raise very high the standards of olive oils that make the super food health claim. The analysis is carried out using the NMR phenol analysis method of Dr. Magiatis in the Faculty of Pharmacy in the University of Athens.

The Competition is international and the olive oils are judged based on their content of total polyphenols, compounds that are proven to act very beneficially to the human body. From November 2015 to March 2016 540 samples were submitted to the competition by 325 producers from Greece, Spain, Cyprus, Italy and the USA. All samples were analysed in the University of Athens using the NMR method by Dr. Prokopios Magiatis and Dr. Eleni Melliou (professors of Pharmacognosy and Natural Products Chemistry in the University of Athens) who together with their scientific team have started in the last five years the pioneering certification of the health protecting properties of olive oil
