    In the picturesque island of Andros, wild thyme flourishes on the rocky terrain beneath olive trees. It comes into full bloom between mid May and early June, dressed in its vivid, coruscating purple gown. We pick it by hand to preserve critical foliage and flower on the plant, so that we may enjoy it in blossom for years to come. By drying it naturally in optimal conditions, we retain its intense color and aroma, spicy taste and antioxidant and antibacterial properties to their fullest.
